Irresistible Plates Full of Flavor and Culture
Ingredients
- 2 cups maize meal (cornmeal)
- 4 cups water
- 1/2 teaspoon salt (optional)
- 6 beef or pork sausages
- 2 tablespoons oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon curry powder
- 1/2 teaspoon black pepper
- 1 teaspoon tomato paste
- 2 tomatoes, blended or finely chopped
- 1 cup beef or chicken broth
- Salt to taste
For the Fresh Salad (Kachumbari):
- 2 tomatoes, diced
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1 tablespoon chopped cilantro (optional)
- 1/2 chili, finely chopped (optional)
Instructions:
- Bring the water to a boil in a pot.
- Gradually add the maize meal while stirring continuously to prevent lumps.
- Reduce heat and continue stirring until thick and smooth.
- Cover and let it steam for 5 minutes.
- Serve warm.
- Heat oil in a pan and fry the sausages until browned. Remove and set aside.
- In the same pan, add onions and garlic, and sauté until soft.
- Stir in paprika, curry powder, black pepper, and tomato paste, cooking for 1 minute.
- Add blended tomatoes and simmer for 5 minutes until thickened.
- Pour in the broth, add salt, and return the sausages to the pan.
- Let it simmer for 10-15 minutes until the sauce thickens.
- Mix all the chopped vegetables in a bowl.
- Add lemon juice and salt.
- Stir well and let it sit for a few minutes before serving.
Serve everything together on a plate and enjoy!
