Beef Strips with Macaroni and Cheese, Potato Salad, and Sautéed Bell Peppers
Ingredients:
Beef Strips:
- 1 lb beef strips (sirloin or flank steak)
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Macaroni and Cheese:
- 2 cups elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 2 cups sharp cheddar cheese, shredded
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Potato Salad:
- 3 medium potatoes, boiled and cubed
- 1/3 cup mayonnaise
- 1 tbsp mustard
- 1 small red onion, diced
- 1 small carrot, grated
- 2 tbsp parsley, chopped
- Salt and pepper, to taste
- Sautéed Bell Peppers:
- 1 cup red and yellow bell peppers, sliced
- 1 tbsp olive oil
- 1 tsp garlic, minced
- Salt and pepper, to taste
Instructions:
Prepare Beef Strips:
Marinate beef strips in soy sauce, olive oil, garlic powder, smoked paprika, salt, and pepper for 15 minutes.
Heat a skillet over medium-high heat and cook beef strips for 4-5 minutes, stirring occasionally, until browned. Set aside.
Make Macaroni and Cheese:
Cook macaroni according to package instructions. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
Gradually whisk in milk, cooking until slightly thickened.
Add cheddar cheese, Dijon mustard, salt, and pepper, stirring until melted. Combine with cooked macaroni.
Prepare Potato Salad:
In a large bowl, mix boiled potatoes with mayonnaise, mustard, red onion, grated carrot, parsley, salt, and pepper. Chill until ready to serve.
Cook Bell Peppers:
Heat olive oil in a skillet over medium heat. Add bell peppers and garlic, sautéing for 3-4 minutes until tender. Season with salt and pepper.
Assemble Plate:
Arrange beef strips, macaroni and cheese, potato salad, and sautéed bell peppers on a plate or tray.
