Fluffy Japanese Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk (or milk with 1 tsp vinegar)
- 1 egg
- 2 tbsp melted butter (plus more for the pan)
- 1/2 tsp vanilla extract
- Maple syrup (for serving)
Instructions:
- Prepare the batter: In a bowl, mix the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
- Combine: Pour the wet ingredients into the dry and gently mix until just combined. Do not overmix.
- Cook: Heat a non-stick pan over low-medium heat and lightly grease it with butter. Pour batter into the pan to form thick, round pancakes. Cover with a lid and cook for 2–3 minutes on each side or until golden and fluffy.
- Serve: Stack the pancakes and drizzle with maple syrup or your favorite topping
