Fluffy Japanese Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk (or milk with 1 tsp vinegar)
  • 1 egg
  • 2 tbsp melted butter (plus more for the pan)
  • 1/2 tsp vanilla extract
  • Maple syrup (for serving)

Instructions:

  1. Prepare the batter: In a bowl, mix the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  2. Combine: Pour the wet ingredients into the dry and gently mix until just combined. Do not overmix.
  3. Cook: Heat a non-stick pan over low-medium heat and lightly grease it with butter. Pour batter into the pan to form thick, round pancakes. Cover with a lid and cook for 2–3 minutes on each side or until golden and fluffy.
  4. Serve: Stack the pancakes and drizzle with maple syrup or your favorite topping
