Salmon & Plantain Power Plate
Ingredients:
- 1 salmon fillet
- 1 ripe plantain (sliced)
- 1 cup fresh spinach
- 1/2 avocado (sliced)
- 1 tbsp olive oil
- Salt, pepper, and chili flakes
Instructions:
- Season salmon with salt and pepper; pan-sear 4–5 mins per side.
- Fry plantain slices in oil until golden and crispy.
- Sauté spinach until wilted (1–2 mins).
- Plate salmon with spinach, plantains, and avocado slices.
- Sprinkle chili flakes on avocado. Serve warm.
